Capocollo di Martina Franca is the "king" of Apulian cured meats, originating from the Itria Valley in Puglia, Italy. It is a traditional pork cured meat made from the neck muscle (the part between the head and the fifth/seventh vertebra), renowned for its delicate balance of sweetness, acidity and a subtle smoky aroma.
