Spumone
The traditional version features three distinct layers of gelato (often hazelnut, chocolate, and fiordilatte) with a filling enriched with sponge cake, toasted almonds, candied fruit, and dark chocolate.

Structure: A dome-shaped mold (or "zuccotto") is used.Ingredients: High-quality artisanal gelato, sponge cake (sometimes soaked in liqueur such as rum or alchermes), dried fruit (almonds, hazelnuts), and dark chocolate shavings.
Preparation: The mold is lined with a layer of gelato, filled with the sponge cake filling and remaining gelato, and then frozen for several hours until it reaches a firm but frothy consistency.
