Apulian Spumone is a dome-shaped layered ice cream, typical of the Salento and Bari traditions, characterized by a soft center and a complex structure.

It is recognized as a Traditional Agri-Food Product (PAT) of Puglia.

Origins
Although today it is a symbol of Apulian pastry making, its roots date back to the Kingdom of the Two Sicilies.

    Ingredients: High-quality artisanal gelato, sponge cake (sometimes soaked in liqueur such as rum or alchermes), dried fruit (almonds, hazelnuts), and dark chocolate shavings.

    Preparation: The mold is lined with a layer of gelato, filled with the sponge cake filling and remaining gelato, and then frozen for several hours until it reaches a firm but frothy consistency.
