Apulian Spumone is a dome-shaped layered ice cream, typical of the Salento and Bari traditions, distinguished by its soft center and complex structure.
It is recognized as a Traditional Agri-Food Product (PAT) of Puglia.
Origins
Although today it is a symbol of Apulian pastry making, its roots date back to the Kingdom of the Two Sicilies.
Brief Description
Spumone is a dessert "constructed" in layers:
Outside: A solid ice cream shell, usually in classic flavors such as chocolate, hazelnut, or cream.
Heart (Soul): The center is the richest part and may contain:
Sponge cake soaked in liqueur.
Chopped or toasted almonds, candied fruit, and dark chocolate shavings.
In some variations, such as the one from Conversano, caramel or whipped cream is also found.

    Structure: A dome-shaped mold (or "zuccotto") is used.

    Ingredients: High-quality artisanal gelato, sponge cake (sometimes soaked in liqueur such as rum or alchermes), dried fruit (almonds, hazelnuts), and dark chocolate shavings.

    Preparation: The mold is lined with a layer of gelato, filled with the sponge cake filling and remaining gelato, and then frozen for several hours until it reaches a firm but frothy consistency.
